Not so long ago, when the world stood still and many were pondering the meaning of life over sourdough starters and a relentless case of the munchies, a shocking realisation occurred:
We hadn't had a real bagel in forever...
How was anyone surviving?
Born and raised in Saskatchewan (Canada) where bagels—like hockey—were a staple in most households, there had to be a solution for the busy lifestyles of the South West.
There’s little as comforting or convenient as a thick layer of schmear aka whipped cream cheese, slathered on a freshly baked bagel. IYKYK.
So Jesse got to work in the kitchen, where he learned to perfect the bagel (no easy feat). Next thing you know, people were talking and cafes were calling...

Meet the Team

Founder & Specialist
Jesse Mulligan-Hopper
Jesse left a career in hospo (covid days) to pursue his passion for bread. Why not?
He developed a bagel recipe using overnight proofing that varies based on ambient temperature + humidity.
What began mostly at random one experimental, gluten-filled morning lead to an unexpected success story!

Master Technician
Kris Olson
Kris was in a career of spreadsheets and wet boots working outdoors as an environmental scientist; instead of battling the wind, he threw caution to it and decided to join the operation. This kitchen never gets cold.

Operations
Erica Lawrence
Erica jumped on board recently to build the new website and help oversee biz operations. She's also an Iodine-Literate Naturopath and runs an online HTMA (hair tissue mineral analysis) practice.

Hockey Heads
Team WA
Both Jesse + Kris helped found the SW inline hockey league in Dunsy + Margs, they play for team WA, and have represented the state at a national level going on 3 years. New recruits always welcome for the SW league. Get in touch if you're interested!
The 3 musketeers all hail from Saskatoon, Saskatchewan, Canada (say that 3 times!), grateful to escape 9 months of winter and call the South West home since 2013: Jesse + Erica are in Dunsy, Krisso (the Wizard) in Margs, and the Bagel HQ is in Busso, sharing a space with the legendary Jibba's Hot Sauce.
We're proud to bring better quality bagels and whipped schmears to the good people of this special region.
